Does anyone make their own Jerky seasoning marinade that they use on their beef or Deer meat before dehydration. I usually just use cabelas Jerky seasonings. What say you .?

Soy sauce or teriyaki sauce for base, then season, garlic and hotsauce to taste. Lots of brown sugar and pepper mix. I make it a couple different ways, lean deer and elk, sliced and run through the cuber, 15-30 min soak. Sprinkle with a pepper mix. Plenty of salt in the soy/teriyaki sauce so don’t need any additional salt.
With beef I don’t run through the cuber. Trim really hard, the fat goes rancid pretty quick.
Ground meat mix with the sauce and squirt out through a jerky gun onto plastic sheets, let the sauce run out before putting it on the trays or it will be tough to remove.
Move it around as it dries.
For dehydrator I like the old Snackmaster Jr., best dehydrator ever made. They will handle 20 trays or more each so as the motors wear out I added new ones, up to 30 or 40 trays now. Put an empty tray with the plastic liner on the bottom and stack away. Have them on the watch list on ebay in case one pops up. Got an offer on one right now.
I think the teriyaki as a base sounds good. I kike that sobits all just season to taste sounds very similar to my buddy johns mixture except the base which I think he said was worchestshire sauce .
I throw some of that in also. and a half a bottle of Wrights Liquid Smoke, forgot about that. Or more, depending on the batch. I usually make enough for 3 batches or so, and put it back in the gallon teriyaki bottles. Keeps forever in the fridge.
I like hickory smoke flavoring
I use liquid smoke soy sauce garlic and onion powder and crushed red chilli .
