Naturally occuring on the peppers themselves, the brine keeps bad organisms from growing. Go to Urban Farm and Kitchen for directions on fermenting all kinds of garden produce. Actually there’s oodles of sites about making hot sauce.

So does the fermenting make it taste like kimchea ( which is just awful.(IMHO)
I have never heard of fermenting veggies … now if you are referring to pickling … I have had pickled corn , and Cabbage(sourkraut) but is this a similar process ?

Yes, just not fermented as long, 4 to 7 days for these sauces. Sugars and other nutrients, flavors from the peppers and fruits are converted into lactic acids; tangy sour flavors. Also a malty aspect; the ferment has a alcohol/beer smell. Complex flavors are developed and nutrients are more easily accessable. If you smell a bad ferment however it should be discarded.
I did use 2 tablespoons of the brine, and 1/2 cup canned pear to make it sweeter.

I’ve also made cooked hot sauces like Mango Habanero or others. Look at Mexican Please for those recipes.

I had some peach habenero salsa a couple years ago , that was so good make ya tongue want to slap your brains out… lol…I bought it in the mountains at a little antique/ thrift store … was made by a small private producer… was soooo stinking good !! Wished I would have bought all of the jars … didnt know how it would taste … man did I mess up on that one.

My favorite salsa is safeway’s peach pineapple, not hot but consistently good. A new sauce I discovered is “Wet Wizard Pear Habanero”. Another is Bullwhip Hot Sauce, an Alaskan hot sauce made with bullwhip kelp/seaweed. Great on vegetables.

Should i sort or sell this mess, i don’t reload so probably better to sell for scrap. 7 gallon bucket. probably weighs 70 pounds. most of it is pistol brass. top layer is rifle. several different calibers too.

Please don’t, plenty of retailers will at a minimum give you credit towards ammo purchases, or, sell on gunbroker etc to a reloader
